Light Honey Ginger Cake
Ingredients
3oz Margarine
6oz honey
2 fl oz soft brown sugar
4fl oz milk
half tsp bicarbonate of soda
3oz self raising flour
2tsp ground ginger
3oz wholemeal flour
1 large egg, beaten.
Method
- Put the margarine, honey and sugar in a large bowl
and cook of Full Power in a microwave for 2 minutes.
- Warm the milk in a separate container for 30 seconds
and stir in the bicarbonate of soda.
- Sift the self-raising flour and ginger into the
honey mixture and beat well.
- Add the milk, wholemeal flour and egg and again beat
well.
- Pour the mixure into a base lined 7” round cake dish
and place ona upturned plate and cook for 8 minutes.
Stand for 5 minutes then turn out onto a wire cooling
rack.
- To serve dust the top with sifted icing sugar when
cold.
