Cod Marianne
Serves 4
Ingredients
4 x 250g skinless & boneless cod
Zest of lemon
Ground black pepper
500g asparagus tips
2 x fresh red chillies – finely sliced
1 x fresh green chilli – finely sliced
1 x large avocado – chunky chopped
1 x large pear – chopped
1 x red pepper – sliced
1 x red onion – roughly sliced
Lemon & coriander marinade
Small bunch of fresh chives – chopped
Method
Prepare asparagus, avocado, pear and chillies and place
in a large bowl. Smother and leave in marinade of lemon
and coriander for 15 minutes.
Pre-heat oven to 180°. Place the 4 pieces of cod in
baking foil, lightly cover with lemon zest and pepper and
cook in oven for 20 – 25 minutes.
Stir fry red pepper and red onion on a medium to high
heat for 1 – 2 minutes. Add the marinated contents of the
bowl to the pepper and onion in the pan and fry for a
further 4 – 5 minutes.
Arrange the stir fry on each of four plates and place a
piece of cod on top. Garnish the dish with a sprinkle of
fresh chopped chives.
Serve with a well chilled pinot grigio and Neil Young
in the background.
Afterwards serve selection of English cheeses with a
variety of water biscuits, white grapes and pear poached
in raspberry juice.
