Banana & Sultana Loaf

Serves 12
Ingredients

125g Butter/Margarine
125g Soft Brown Sugar
1 Large Eggs
2 Ripe Bananas
2 tbsp Honey
225g Plain Wholewheat Flour
2tsp Baking Powder
1tsp Mixed Spice
125g Sultanas

Method

  1. Preheat the oven to 108°C/ Gas 4
     
  2. Cream the eggs and sugar until light and fluffy
     
  3. Beat in the eggs one at a time
     
  4. Mash the bananas with the honey than stir into the mix
     
  5. Mix the flour with the baking powder and mixed spice, then stir into the mix along with the sultanas.
     
  6. Grease and line a loaf tin.
     
  7. Poor the mix into the tin and bake for approx 1 hour 10 mins, until the loaf is well risen, golden and firm
     
  8. Leave to cook for 5 mins before turning out on a wire rack. Once cold cut into 12 slices.
